- 2 cups of green peas (fresh or frozen)
- 2 cups of spring mix
- 2 tomatoes
- salt, ground black pepper, oregano,
- 1 tsp. of garlic and white pepper powder
- 1 lemon
- feta cheese of your taste
Season the salmon fillet and put on foil lined baking pan. Season the fillet with oregano, salt, pepper and garlic powder. Squeeze out half of the lemon and bake it in preheated oven for 20 minutes. Wash spring mix and tomatoes, cut feta cheese and tomatoes in cubes, mix all together and season. Squeeze the rest of the lemon on top. In a large pot, bring 2 liters of water to a boil. Pour frozen peas into a steamer and place in pot. Cover the pot, keep at medium heat for 4 minutes and wash it with cold water to prevent further cooking and keep the bright green color. Chop the dill and garnish salmon with it. Serve right away.
